It's worth mentioning that our host

for the evening, Stefaan Moyaert,

really knows his cocoa when it comes to top notch chocolates. Having learnt his craft at the chocolate / patisserie school in Brussels and worked (among others) for the famous Patisserie Mahieu (Brussels) and Chocolaterie Opera (Antwerp), Stefaan also spent many years treading the boards at a number of the world's most prestigious fine chocolate trade fairs, including the Salon du Chocolat exhibition in Paris and the IBA exhibition in Germany.
